Ingredients

  • 4 tablespoons unsalted butter
  • 1 to 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 1/4 teaspoon salt, to taste
  • 1/8 teaspoon black pepper
  • 8 ounces fettuccine, cooked

Instructions

  1. Melt butter in a medium saucepan over medium heat.
  2. Add garlic and cook for 1 minute, until fragrant.
  3. Pour in the cream and bring to a gentle simmer. Cook for 3 to 4 minutes, stirring often.
  4. Lower the heat and whisk in the Parmesan a small handful at a time, until smooth.
  5. Season with salt and pepper, taste, and adjust.
  6. Toss with the cooked pasta and serve right away.

Notes

Scaling down Alfredo sauce is straightforward since the recipe is simply a ratio. This is exactly half of the standard four-serving recipe.
With a smaller amount of cream, it can thicken slightly faster. Watch the heat carefully and pull it off once the Parmesan is melted and the sauce is smooth.

Why Small Batch Scaling Works Well Here

Alfredo sauce is one of the easier recipes to scale because it is a simple ratio: equal parts cream and Parmesan, with butter as the base. There are no complex leavening ratios or baking chemistry to account for. Half the recipe gives you half the sauce, and the cooking time is nearly the same since the main variables (simmering the cream, melting the cheese) depend on temperature and technique more than volume.

Use a Smaller Pan

This is the one adjustment that actually matters when scaling down. A large skillet with a small amount of cream will cause the liquid to spread thin and reduce too fast, sometimes before you have even added the cheese. Use a medium saucepan or an 8 to 10 inch skillet for a two-serving batch.

Serving Ideas

For a romantic dinner, toss this with fresh fettuccine and add a few shrimp on top using the quick method from our shrimp Alfredo sauce recipe. The whole dinner, pasta and sauce and protein, can be ready in under 30 minutes.

Storage

If you end up with leftover sauce from a two-person batch, store it in a small sealed container in the fridge for up to 3 days. Reheat gently with a splash of cream.

Can I just use half of a regular Alfredo sauce recipe?

Yes, that is exactly what this is. Halving any cream sauce recipe scales directly without any adjustments needed.

What is the right amount of pasta for two people?

About 8 ounces of dried pasta or around 3/4 pound of fresh pasta for two moderate servings with a rich sauce like this.

Can I make this in a single small pan?

Yes, a medium 8 to 10 inch skillet or saucepan is the right size for a two-serving batch. A larger pan will cause the small amount of cream to reduce too fast.
