Heavy cream gives Alfredo sauce its rich texture, but it is not the only option if you do not have any on hand. Several substitutes work well, each with a slightly different result in richness and thickness.
Whole Milk Plus Extra Butter
This is the closest match to heavy cream in terms of overall richness. For every cup of heavy cream called for, use 3/4 cup whole milk plus 2 tablespoons of melted butter. This adds back fat that milk alone does not have, helping the sauce thicken and taste richer.
Half and Half
A straightforward 1:1 swap for heavy cream. The sauce will turn out a bit thinner since half and half has less fat, so add a little extra Parmesan to help thicken it back up. See our Alfredo sauce without heavy cream recipe for an approach built around lighter dairy like this.
Evaporated Milk
Evaporated milk already has about 60 percent of its water removed, which gives it a naturally thicker consistency than regular milk. Use it as a 1:1 substitute for heavy cream, it works especially well in Alfredo sauce and is a pantry staple many people already have on hand.
Cashew Cream (Dairy Free)
For a dairy free option, blend 1 cup of soaked raw cashews with 3/4 cup of water until completely smooth. This makes a substitute close in thickness to heavy cream, with a mild, neutral flavor that works well in savory sauces. Our vegan Alfredo sauce recipe uses this method with additional seasonings for a full dairy free sauce.
Greek Yogurt
Stirred in off the heat at the end of cooking, Greek yogurt adds richness and a slight tang. It does not hold up well to direct simmering, so add it after the sauce is otherwise finished, not at the start. Our healthy Alfredo sauce recipe uses this approach for a lighter, lower fat sauce.
Quick Comparison
| Substitute | Ratio | Best For |
|---|---|---|
| Whole milk + butter | 3/4 cup milk + 2 tbsp butter per 1 cup cream | Closest overall match |
| Half and half | 1:1 | Easy, common swap |
| Evaporated milk | 1:1 | Pantry staple, good thickness |
| Cashew cream | 1:1 | Dairy free option |
| Greek yogurt | Add at the end, to taste | Lighter, lower fat sauce |
Will the Substitute Change the Flavor?
Most of these swaps keep the flavor reasonably close to the original, with two exceptions worth noting. Cashew cream is the most neutral and closest in flavor to heavy cream itself. Greek yogurt adds a noticeable tang that heavy cream does not have, which some people enjoy and others prefer to avoid in a classic Alfredo sauce.
What About Just Using Less Liquid Overall?
If you do not want to use a substitute at all, you can lean more heavily on the cheese itself. Reduce the liquid slightly and increase the Parmesan, letting the cheese provide more of the body. This works, though the sauce will taste noticeably cheesier and less like a traditional cream sauce.
